Making the FILLING…
Roast eggplant. I roasted the whole eggplant (with a few fork pokes) on my gas stove burner. Moved to a cast iron pan when the juices started to come out. You could also roast in the oven or on the grill. When done, and while still hot, remove the eggplant meat from the skin. Using fork/knife, pull apart the meat. Add seasons and oil. Chop and add veggies to your desire. Add more oil/seasons as needed. Add Feta and Olives.
Wrapped the filling in Brown Rice Paper. The dip refrigerates nicely. Perfect for a meal, snack, or side. Can also eat the filling with crackers, cucumbers, etc. Could even image adding some hummus to dip these wraps in… that would be heavenly.
